How does a thermocouple work?
A Thermocouple is made of two dissimilar metallic wires, which are joined together to form a junction. When the junction is exposed to a temperature fluctuation (heated or cooled), a small voltage is generated in the electrical circuit of the thermocouple which can be measured, and this corresponds to temperature.

What is a thermocouple used for
Thermocouples can be used in a wide variety of temperature measuring applications. This can be negative temperature to high temperature applications. Most common applications are Oven monitoring, Furnaces, Fridges, Freezers, process monitoring, etc.
